Pea Salad

3lbs. frozen peas, rinsed in hot water but not thawed
2 cups sweet pickle chips, chopped
1 cup diced red bell peppers
2 cups diced celery
12 hard-boiled eggs, whites only, sliced
1/2 cup finely-chopped onion
1 cup cubed American cheese

4 cups mayonnaise
1/4 cup sugar
1/4 cup chopped sweet pickle chips
1 Tbls. diced red bell pepper

In a large bowl, combine first 7 ingredients. In a separate bowl, mix last 4 ingredients. Add to salad mixture and gently toss. *This recipe makes a lot that is perfect for carry-ins and picnics.* Enjoy!
