1 cup butter, softened
1 1/2 cups sugar
2 eggs
1 tsp. baking soda
2 3/4 cup all-purpose flour
2 tsp. cream of tartar
1/2 cup sugar with 2 tsp. cinnamon stirred in
Cream together the butter and sugar. Add the eggs one at a time, mixing well after each. Mix all dry ingredients together and add them to the egg mixture 1/3 at a time, mixing well after each addition. Cookie dough will be soft and sticky. Refrigerate the dough for at least 1 hour. Shape the dough into small balls (the size of one of those bubble-gum machine bouncy balls) and roll them in the cinnamon-sugar mixture. Place them on a baking sheet that has been sprayed with cooking spray about 2 inches apart and flatten them slightly. Cookies will spread out as they bake. Bake at 400 degrees for 10 to 12 minutes or until lightly browned around the edges, but still soft. Let cool and enjoy. This will make about 6 dozen cookies.
